I just made my best batch of guacamole yet, and I thought other people might like the recipe. (Such as it is. It's very flexible.) Anyway, here’s the pseudo-recipe:

1 ripe avocado, mashed but still chunky
Approx 1/3 of a sweet onion, minced fine.
1 squirt minced garlic. (somewhere between a heaping tsp and a scant tbsp. All I had was the stuff in the squeeze bottle. It's probably even better with the real thing.)
Zest + juice of 1 lime (you may want to start with ½. It’s pretty strong.)
Dash salt-free adobo
Light drizzle of roasted red pepper olive oil

Anybody who thinks salt-free food has to be tasteless should try this. Smile It helps that I somehow managed to get a perfectly-ripe avocado.
