8 oz digestive or other biscuits (graham crackers are probably the closest American alternative)
1.5 oz glacé cherries
1 oz raisins
4 level tbs golden syrup
4 oz butter
3 level tbs cocoa powder

Chop cherries, line a shallow tin with foil, crush biscuits. Melt butter and syrup, add cocoa, raisins, cherries, etc, bring just to boil. Remove from heat, mix in crushed biscuits, press into tin.

When cold, ice if liked with 1 oz Bourneville cocoa, 1 dessertspoon milk, 2 oz butter and 6 oz icing sugar all creamed together.

Cut into pieces about 1" by 1/2" to serve.

Apologies for the old-fashioned measurements; this is my mother's recipe and I haven't made it for many, many years.

Golden syrup is not readily available in the US, I don't think. I gather it's like molasses only lighter--could one substitute molasses in this, d'ya think, or would corn syrup be the route to go?

Funnily enough, Kathy_S and I had a discussion about that very thing a couple of months ago, and I seem to remember that we came to the conclusion that corn syrup was probably the most similar to golden syrup.


Don't worry about the dust bunnies, they're just here to guard the treasure.....

You can find actual Golden Syrup in some places, but dark corn syrup would be an appropriate substitute

It's pretty foul stuff whatever - I have always disliked it on its own, although it's okay in things like this recipe. I wonder whether one could substitute agave nectar - might be worth trying, and probably wouldn't smell quite so nasty when being hotted up.

No, this is it - the green and gold tin at the front of this picture is probably the image that most people in the UK recognise from childhood onwards.

Golden syrup is clear, fairly thick when cold, and has more calories per spoonful that one really wants to dwell on. One of the favourites among winter puddings that uses it is this. Definitely a pudding for cold weather when one is feeling fair clemmed with hunger and needing something that will stick to the ribs. Smile

Pity. Molasses, I've got. I use it in gingerbread and very occasionally in my coffee, and that's about it--so one bottle lasts a good long while. Smile Corn syrup's not something I keep around the house. Huh--I wonder about maple syrup. Though it's not very thick, even when cool...

It's definitely not molasses! Hehe

In order of refinement it generally goes: molasses -> treacle --> golden syrup (and then if you are in the UK --> Lyles golden syrup! Lyles is much paler than the golden syrup we get here in Australia.)
Corn is from a different source (duh - from corn) so it has a different flavour.
Maple syrup is good but it has a much lower burn temperature so you have to watch what you use it in. (For example - I tried using in on top of a fruit crumble and it burnt very quickly).

Honey is a good substitute for golden syrup in a lot of cases. Smile

I knew it wasn't molasses, I just wasn't sure if molasses could sub for it. As they're both made from sugar cane, I thought they might be more alike in flavor than golden syrup vs. corn syrup. But sounds like not! Ah well. I'm not a huge fan of sweet stuff to begin with, but I have to admit I'm intrigued by this recipe...

Hey! We don't eat Marmite here! Razz (Fine, we do eat Vegemite ... but we don't slather it on like it is peanut butter.) And I have no problem with the difference between sweet and savoury. Razz

Half a level teaspoon on a slice of hot toast and butter - mmm...! Smile Mind you, any larger quantity than that and I think the inside of one's mouth would shrivel up.

Just my personal opinion but I love golden syrup and I hate molasses - I also don't like dark treacle because I think it is too strong. I don't think corn syrup would be much of a substitute.

(Oh and I like Marmite too!)
