I just made my best batch of guacamole yet, and I thought other people might like the recipe. (Such as it is. It's very flexible.) Anyway, here’s the pseudo-recipe:
1 ripe avocado, mashed but still chunky
Approx 1/3 of a sweet onion, minced fine.
1 squirt minced garlic. (somewhere between a heaping tsp and a scant tbsp. All I had was the stuff in the squeeze bottle. It's probably even better with the real thing.)
Zest + juice of 1 lime (you may want to start with ½. It’s pretty strong.)
Dash salt-free adobo
Light drizzle of roasted red pepper olive oil
Anybody who thinks salt-free food has to be tasteless should try this. It helps that I somehow managed to get a perfectly-ripe avocado. Member of Carpe Libris: http://carpelibris.wordpress.com/

Sounds lovely, Melissa. I tend to get my avocado fix through having half of one mashed onto a slice of wholemeal toast, then topped with crispy bacon, for breakfast. Guacamole is so nice and fresh-tasting though, isn't it.
I'm going to move this and some of the other stand-alone recipe ideas into the Recipe Thread, at the top. Just so we can keep track of everything (plus, it makes it easier to check what's been moved over to the PWYF blog)."Never let a computer know you're in a hurry."
