Lights are the term given to lungs of animals, presumably a relatively cheap form of offal. According to Wikipedia it's only really used these days in recipes for haggis.

Lights as in lungs, which your friendly neighbourhood butcher would save and you'd cook them, and it stunk out the kitchen! They are delicious in haggis, but arguably not when dog-food.

Some of the better-quality pet stores here offer freeze-dried lamb or cow lungs as dog treats (along with other bits).

While they still maintain a website (as of yesterday), they do not, on that website, offer cherry butter, even though I ran across a couple of websites claiming to have ASF cherry butter...

My mother would buy kidneys (stiiiiinky!) and "melt" meat to make up for the cats. Never went there myself. Mithril never got expensive kitty food, but the dogs are reaping the change in economic status (I never held good paying jobs), and don't have to be eating the cheapest food I can find.

Kidneys are delicious, especially in a steak-and-kidney pudding! Liver is all right occasionally, and sweetbreads are serious heaven when you can get them. I remember loving brains as a small child, but they have been off the market for years, and are unlikely to return.

While I don't eat organ meat myself, I can tell you that brains are still available in the US (though you wouldn't know it from watching network news.)

I have to say I'm glad that "Steak and mushroom pie" is an equally common option when I'm travelling over there. Smile

Yes, I went and looked after I wrote that. It appears they just pulled back from being a nationwide chain, and now their only retail locations are in Michigan. I went ahead and ordered cherry spoon fruit, which was pretty amazing too as I recall. But I wonder if cherry butter's something they've discontinued recently; since it's got a decent shelf-life, merchants who carry ASF might still have some stock.

Well, I tried the allrecipes.com flapjack, and it was okay. It didn't chip my teeth this time, so that's an improvement. Smile

It had some chewiness, but no gooeyness. The search continues...

I was visiting my parents yesterday and was delighted to see - although less delighted to smell - that she was cooking a pig's lights for the dog! My brother had just butchered a pig, and so she was able to have the lights for the dog. I got the heart and some of the liver - and some of the outside meat, too! All in my freezer except the heart, as I simply can't resist the idea of having heart on Valentine's Day!
