Ever since I cut way back on sodium, I've missed sausage like you wouldn't believe. Last night I hit upon a recipe that actually tastes good. It was all trial-and-error, so I'm putting down as much as I can remember before I forget completely.

Ingredients:

2 lbs ground pork
2 tablespoons garlic powder
1 " Salt-free Sage + Savory blend
1 " ground rosemary
1 tsp mustard powder
1 tsp marjoram
1 tsp Smokehouse pepper
1/2 tsp Worcestershire pepper
" Sunny Spain (Salt-free lemon pepper)
" tsp red pepper flakes, ground to powder
1/4 tsp allspice

Blend the spices in the spice grinder.
Add the powder to the meat.
Blend in food processor until the meat is smooth and the powder's evenly distributed.
Let sit in fridge overnight.
Shape into patties and fry.

(It's REALLY good with Hickory Farms cranberry mustard.)

Hmm, that looks good, Melissa. I'm not sure I'd be able to get the Smokehouse pepper over here though. I wonder if smoked paprika might be a reasonable substitute?

Not sure. Maybe black pepper and Liquid Smoke?

I had the last of it today, crumbled into a sausage, egg and cheese scramble. Yum!
