And re the avocados, do either of you like the breakfast that is wholemeal toast spread with half a small ripe avocado and topped with crispy bacon? Very nourishing and delicious. Smile

Delighted to hear he's home, and hope that the roast chicken will work its usual your-family magic.

I adore avocados - in a sandwich with bacon or smoked salmon is my favourite way of eating them, but also chopped up with tomatoes in vinaigrette. Or the old 1970s way of cutting them in half, removing the stone, filling the hollow with vinaigrette and eating the result with a spoon. I believe the hollow can also be filled with prawn cocktail, but I don't eat prawns so I wouldn't know whether that is nice or not. And, of course, guacamole.

My favourite breakfast is wholemeal toast spread with avocado and topped with sliced fresh tomato, generously seasoned with salt and ground black pepper. I've been having it recently using up the last of our summer crop of tomatoes. Yum.

I'm sooo glad to hear that Peter is home now. There's no place like hospitals to make certain that you won't get ANY rest whatsoever. I hope his recovery will be swift and that he will be able to eat. And here's hoping that your amount of sleep will increase.

Thank goodness you've got Peter home. I agree with others here who've made the observation that hospitals are among the worst places to recuperate.

Avocado recipe: chopped avocado and strips of oven-roasted red pepper, tossed in dressing of equal parts walnut oil and balsamic vinegar, seasoned with black pepper. Spread liberally over wholemeal toast. Toasted walnut bread is even better!

Yippee, hooray for Peter's homecoming!

I usually just slice my avocados over a leafy green salad-in summer it's especially nice with tomatoes, red peppers, and sweet corn with lemony vinaigrette. In the winter a leafy salad topped with avocado, beets, bacon, shreds of roast chicken and/or hard-cooked egg makes a good entree. Avocados are also great sliced on a turkey (or roast chicken) sandwich.

Even when I ripen them at home I'm not very good at judging "the right time"(TM). It's always a crapshoot. A good avocado is SO good that it's worth the gamble.
